It’s no secret that eggs are the easiest and cheapest natural source of protein. They are easy to cook as a meal on their own or as a snack. You can also add eggs to other meals to boost up their protein value. Here’s my version of scrambled eggs with smoked salmon and avocado on rye bread.
The best thing about this recipe is that it takes minimum time and effort to prepare and cook. In 5 minutes you get a very tasty meal packed with 33g of protein. Let’s get cooking:
- 2tbsp of olive oil (cooking oil of your choice)
- 1 clove of chopped garlic (optional)
- 1 chili sliced (optional)
- 4 large eggs (24g protein)
- 20g of smoked salmon (5g protein)
- Half an avocado sliced (2g protein)
- 1 slice of rye bread (2.7g protein)
- Black pepper to taste
- Parsley to taste
Add the oil, garlic and chili in a non-stick pan and sweat for a couple of minutes. Then crack the eggs and stir well. Keep stirring them for a couple of minutes or until cooked to your taste. Add the smoked salmon slices and stir well. Turn the heat off and leave to cook for another minute. Keep an eye on them to make sure you don’t burn them.
Cut the avocado in half, peel and slice half of it. Wrap the other half in clingfilm and keep it in the fridge for the next time. Chop some parsley for decoration.
Serving your scrambled eggs with smoked salmon and avocado on rye bread
Put your rye bread slice on a plate and cover with the scrambled eggs and salmon. Sprinkle the parsley and season with black pepper, then arrange the sliced avocado on top and you are done.
These nutritious and protein-packed scrambled eggs with smoked salmon and avocado on rye bread are perfect for breakfast or as a snack at any time of the day. If you are a gym goer, you can have them as your post workout meal.
